~2 Oranges

~½ Cup bottled olive oil-and-vinegar salad dressing

~12 oz cooked jumbo shrimp

~8 cups baby mixed greens

~½ cup sliced red onion

  • Grate ½ tsp zest and squeeze 2 Tbs juice from 1 orange. Cut rind from remaining orange. Thinly slice orange flesh; reserve. In bowl, whisk together dressing, orange juice and zest. Transfer ¼ cup dressing to small bowl. Add shrimp; gently toss until evenly coated.
  • Arrange mixed greens, onion and reserved orange slices on serving platter. Arrange shrimp on top; sprinkle with ¼ tsp cracked black pepper. Serve with reserved dressing on the side.
